Balsamic Tortellini

We all know what it’s like to have a full time job and also ride, and still have to keep a clean house and take care of family.  As if it’s not enough that you have to battle traffic on your way home, eat something so you don’t pass out, drive some more, get your ride in, and then drag your exhausted butt home because your trainer kicked your ass – your husband/child/cat wants to eat too.  Stop obsessing over the new online ordering at Panera Bread (guilty).

I like to cook, so I’ll try to share some quick recipes, under about half an hour or so, that will get your tummy full and back out the door to see your beloved ponyface, because everyone knows he’s your favorite anyway.

Super easy way to dress your favorite brand of tortellini. This could really work with any small, cheesy pasta (like mini raviolis). Great with caesar salad - my favorite is the Dole Ultimate Caesar kit. So easy.

Instructions
  1. Heat oil in a large skillet over medium heat. Saute onion and bacon until onion is translucent and bacon is brown; remove from skillet and drain on paper toweling.
  2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  3. Return onion/bacon mixture to skillet and add cooked tortellini. Toss with 2 tablespoons olive oil and heat through. Place in serving dish or bowl, sprinkle with vinegar and cheese and serve immediately.

    • haha! it’s soooo good. and so easy. i was planning to make it over the weekend, but we were doing some house improvements so i just made something out of the pantry since i didn’t have a chance to go grocery shopping.
